The Holiday Inn Panama City is excited to welcome Chef Paul Albrecht, a world renowned chef to their team. The Holiday Inn Panama City has recently made an abundance of changes with its multi-million-dollar renovation, making them the premier hotel in Panama City, and to top off the overhaul of the facility, this hotel is now overhauling it’s dining to create a culinary experience that guests and locals can both enjoy!
From Rosemary Beach to Atlanta, all the way to Switzerland, Chef Paul has been pleasing pallets at incredible restaurants for over 50 years and he’s now here in Florida to take on the challenge of making the Holiday Inn the most incredible place to eat in Panama City.
Chef Paul is planning to completely revamp the way people view the food at a Holiday Inn, and to do so he’s completely changing every aspect of the dining experience – starting with the name of the restaurant.
“After we completed the remodel we had a beautiful space but it lacked a personality, so we’re introducing a new name for the restaurant and the bar and offering a new menu with spectacular flavors to match” Says Jennine Brown, General Manager at the Holiday Inn Panama City.
The Holiday Inn’s Restaurant is now called the Bellini Café – offering steaks, seafood, and pasta, and as an extension of this the bar will now be the Bellini Cocktail Lounge. The name was derived from an Italian champagne cocktail, which is a light and fresh combination sparkling wine with a fruit puree, and that really fits the atmosphere in the newly remodeled Holiday Inn. Sticking with that theme the Dinner, Lunch, Brunch, and Lounge menus all have an Italian theme with an American flare.
“I want to deliver the highest quality of food and service here at the Holiday Inn. The menu is being developed to include local seafood dishes inspired by Italian flavors yet still reflecting southern tastes. The dining scene in Panama City will be completely changed by the food at the Holiday Inn’s Bellini Café and Cocktail Lounge.”

After spending several decades redefining the dining scene with his own restaurants in Atlanta, Paul’s Restaurant Bar and Sushi, Pano’s and Paul’s, and Social Vinings, Chef Paul decided it was time for a change, a new challenge, and that’s what brought him to Panama City.
“We’re so excited Chef Paul has joined our team, his food is absolutely incredible, the menus he’s created are far and above anything we ever could have imagined for our hotel. No one else in this town can say they have been named ‘The God Father’ of Atlanta Cuisine. Having someone of his caliber at our hotel is truly something special.” Says Philip Colvin, Director of Marketing at the Holiday Inn.
Chef Paul Albrecht’s culinary talents have garnered him numerous awards and accolades over the years from Atlanta Chef of the Year to one of the four “Master Chefs of America”, as well as being named the Godfather of Atlanta Cuisine by Zagat Magazine. He received his education and did his apprenticeship in Munich Germany then worked as the Sous Chef in Switzerland at several restaurants before coming to the states. Here, Chef Paul was also the chef at the Hotel Sonesta in Washington and Executive Chef at the Lodge of the Four Seasons in the Ozarks, before opening his own restaurants including Chef Paul’s Restaurant in Carillon Beach Fl.
The Holiday Inn welcomes locals to dine at the Bellini Café and the Bellini Cocktail Lounge, and is excited to be rolling out a Sunday Brunch starting July 31st from 11:30am – 2:00pm every Sunday, with dinner, lunch, and bar menus soon to follow.
